Matt Dean Pettit’s Muir Glen Fire Roasted Diced Tomatoes + Spinach Egg White Protein Bites

These protein bites are great quick and easy breakfast bites or the perfect after workout snacks that you can make ahead of time for a great healthy snack on the go.
Ingredient List
- 10 large eggs
- 1 tsp (15g) salt and fresh black pepper to taste
- 1 tsp (15g) garlic powder
- 1 tsp (15g) cayenne pepper, dried
- 1 cup (250ml) Muir Glen™ Fire Roasted Diced Tomatoes
- 1/2 cup (125ml) mushrooms, fresh and finely chopped
- 2 cup (500ml) chopped spinach, finely chopped
- 1 cup (250ml) aged cheddar cheese
Preparation
- Preheat oven to 400F. Line a 12 count muffin pan with silicone baking liners or coat with non-stick cooking spray.
- In a large bowl crack in eggs and whisk together with salt and black pepper.
- Whisk in garlic powder and cayenne until combined. Stir in the Muir Glen Fire Roasted Diced Tomatoes mushrooms, spinach and cheese. Divide evenly into muffin cups filling each about 2/3 full.
- Bake in preheated oven for 12-15 minutes, or until cooked through.
